HOW TO USE Dry rub onto your beef cut of choice, and leave to rest for at least 5 minutes before cooking. Add to non-meat dishes as seasoning during cooking.
INSPIRATION Bazas. This commune in the Gironde department in southwestern France is famous for its cattle of the same name. Bazas beef is highly regarded for its tenderness, flavour and is characterised by its marbling.

INSPIRATION The town of Espelette, famous for the pepper of the same name, is located in the Basque Country, an area found between France and Spain in the western Pyrenees. The flavour has become ubiquitous with the region, and is in fact somewhat mild. Le Fermier took inspiration from the region, and then turned up the dial on the heat!
