Sumac Lamb with Avo Feta Cucumber Salad

This tasty Lamb Loin Chops marinated with sumac and dukka paired with avo feta cucumber salad is a perfect go-to date night meal. Simple and easy to prepare in just under 20 minutes.   • Lamb Loin Chops
  • Couscous (add on for salad)
  • Sumac
  • Dukka
  • Flat leaf Parsley bunch
  • Mint
  • Large Lebanese cucumber
  • Ripe avocado
  • Feta
  • Greek Yogurt
  • Truss cherry tomato


  1. Coat lamb in oil, cover in sumac and half Dukka and let it rest
  2. Dice Lebanese cucumber, avocado and feta and combine in a bowl
  3. Add chopped mint and parsley and mix together with splash of oil and squeeze of lemon
  4. Boil water and cover couscous as per packet instructions
  5. Heat grill pan or bbq, cook lamb until browned on both sides to your liking, remove to rest, add tomatoes to same pan or bbq to blister
  6. Add couscous to salad mixture with additional olive oil and season
  7. Serve with a side of yogurt and grilled tomatoes
