Steak with Anchovy Butter and Fennel Apple Salad

Ingredients
Steak rub
- 1 tbsp garlic paste
- 2 tbsp Dijon mustard
- 1 tsp dried oregano
- zest of 1 lemon
- Flake salt
- black pepper
- olive oil

1 fennel bulb (with the sprouts)
- 1 green apple
- 3 tbsp olive oil
- 1 tbsp vinegar
- 1 tbsp Dijon mustard
- pinch of ground turmeric
- salt

100g unsalted butter
- 10g anchovy
- 1tsp black pepper
Method
To marinate the steak
mix all the ingredients and rub on the steak. Allow it to marinate for 20-30mins. Cook the steak 2-3mins on each side and allow it to rest for 5-6mins.
For the fennel salad
thinly slice the fennel and cook it over the grill until it charred. Thinly cut the apple into strips and rinse it in salt water and set aside until needed.
Mix the olive oil, vinegar, mustard, turmeric and salt in a small jar and shake well until it combines well.
Dress the fennel and apple with turmeric vinaigrette before serving.
For the anchovy butter
soften the butter and add minced anchovy and pepper. Combine them well and roll it on a cling firm. Set aside in the fridge until needed.
