Teriyaki Pinacolada Burger

A Burger Recipe Favourite

This could be your new favourite burger recipe. Teriyaki Pinacolada Burger is a game changer. A combination of a juicy beef burger, with some sweet teriyaki sauce mixed with a tangy flavour from a grilled pineapple. Plus you get that high vitamin C we all need!

Ingredients

    • 4 Brioche Buns
    • 1841 Legacy Burgers
    • 2/3  cup teriyaki sauce 
    • Salt and pepper
    • 2 tablespoons of butter melted plus more for buns
    • 4 slices of pineapple core intact
    • 1/3 cup mayonnaise
    • 4 slices colby jack cheese
    • 4-8 slices of cooked bacon
    • Eggs, Lettuce & Tomato

Pina Colada Sauce

    • 2/3 cups cream of coconut
    • 1 cup crushed pineapple drained
    • 1/8 cups sour cream
    • 1/3 cup dessicated coconut or coconut flakes

Instructions

For the Pina Colada Sauce

  1. Place the cream of coconut and sour cream in a bowl.
  2. Stir until smooth and add the remaining pinacolada ingredients.
  3. Store in the fridge until ready to serve.
  4. In a small bowl, combine the 1/3 cup pina colada sauce and mayo.
Burger Time

  1. Butter each side of the buns, set aside while turning the heat of the grill to high heat.
  2. Season burgers with salt and pepper then place on the grill and grill 4-7 minutes.
  3. Using a spoon drizzle the teriyaki over the burgers.
  4. Flip the burger and spread teriyaki over the burger.
  5. Allow to grill for another 4-7 minutes or as preferred. (A well done burger will not be as flavourful/juicy so we prefer ours medium)
  6. Place cheese over each burger right before it is done.
  7. Grill the pineapple until marks appear on both sides.
  8. Place on a plate and cut the core. 
  9. Grill each bun, inside down until grill marks appear.
  10. Spread the pina colada mayo on each side of the bun.
  11. Place the burger, pineapple and bacon on the bottom and top with the lid. Feel free to add lettuce, eggs and onions.

Notes

Leaving the core will help the pineapple to stay intact while it’s on the grill.
Left overs can be refrigerated for 2-3 days.
